Nutritious Detox Soup

This nourishing detox soup is a quick and easy way to support your health with a blend of anti-inflammatory ingredients. With cauliflower, butternut squash, and miso as its base, this rich and creamy soup can be prepared in under an hour. The addition of curry powder and garlic not only boosts flavor but also provides powerful detoxifying properties, while raw cashews lend a creamy texture without the need for dairy. Whether you're detoxing or just looking for a comforting, nutrient-rich meal, this soup is the perfect solution.

Ingredients:

  • 1 sweet onion, chopped

  • 4 cloves garlic, chopped

  • 1 head cauliflower, chopped (including stems)

  • 1 tbsp olive oil

  • 1 tbsp curry powder

  • 3 tbsp yellow miso paste (chickpea miso works too)

  • 2 cups butternut squash, cubed (frozen, defrosted)

  • ½ cup raw cashews

  • 8 cups water

  • Salt and pepper to taste

Instructions:

  1. Sauté the onion and garlic in olive oil in a large pot until fragrant.

  2. Add curry powder and miso, stirring to coat the onions.

  3. Add cauliflower, squash, cashews, and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the cauliflower softens.

  4. Remove from heat and allow the soup to cool slightly before puréeing in batches.

  5. Season with salt and pepper, drizzle with olive oil, and serve.
